Fiesta Night!

HELLO YOU FABULOUS FOODIES! I’m back this week with a special themed food night!

So I love Mexican cuisine more than any other foods out there, and I thought with the long weekend coming up, why not make a fiesta night for you and your friends? Today I’ll teach you how to make Slow-Cooker Chicken Fajitas, Jalapeno Popper Dip and My Classic Nachos!

Slow-Cooker Chicken Fajitas

Now these can be done however you like, with whatever you like, as long as you follow a few ground rules. For mine, I used two chicken breasts (I was only cooking for myself), red and yellow peppers, red onion, green onion, mushrooms and tomatoes! To make them here is what I did:

1. Put some olive oil at the bottom of the crock pot
2. Cut all the veggies into big pieces and put only half on top of the oil
3. Seasoned the veggies with salt, pepper, fajita seasoning and chili powder
4. Placed the chicken breasts over the veggies
5. Seasoned it the same as the veggies!
6. Put the rest of the veggies on top of the chicken
7. Season again
8. Cook on high for 4-6 hours

Once the chicken and veggies are cooked, you will want to take two forks and pull apart the chicken so it becomes shredded! After that, just let it sit in the crock pot for another 5 minutes!

Jalapeno Popper Dip

This dip is a crowd favourite for those people who like something with a little kick in it! Also really easy to make with only 6 ingredients and not a lot of cook time. I took my initial inspiration from this recipe by tasteofhome.com: http://www.tasteofhome.com/recipes/jalapeno-popper-dip.

You will need:

  • 2 packages of cream cheese
  • 1 cup of mayonnaise (whatever brand, it doesn’t matter)
  • Chopped green chilies (amount depends on how much heat you desire)
  • Chopped jalapeno peppers (^^)
  • 1 cups of Parmesan cheese
  • 1 cup of any other cheese of your choice (I use cheddar)
  • Olive oil!

So now what you want to do is mix up everything but the Parmesan cheese! Bake at 350 degrees for 15 minutes, throw the Parmesan cheese on top and bake for another 10 minutes!

You can customize both these recipes to your tastes and the amount of people you are feeding! (No shame if you eat the entire things yourself, because I know I do).

Happy eating!! 🙂

Student Eating Plan

HELLO ALL YOU FABULOUS FOODIES!!

For this Thursday, I’ve got something a little different for you: A FOOD PLAN!

This is something I’ve used as a student to make sure I’m not wandering around buying whatever I want at the grocery store. This is also a good way to ensure you are eating healthy as a student by filling your fridge with all this yummy stuff!

One big tip I have while using this list is:

1. DON’T SHOP HUNGRY

This will make you more tempted to hangout by the junk food aisles and we all know how that ends……..

By all means, get yourself some treats 🙂  but make sure you also visit the fresh food aisles!

Student Grocery List

(this list is mainly aimed at students living in non-traditional residence or off-campus)

Produce:

Go for 3-4 cheap fruits & veggies (in season) that you like

Variety of things you can cook with and eat as a snack

Fruit:

Ex. Bananas

Ex. Berries (blackberries, raspberries, blueberries)

Ex. Apples

Ex. Oranges

Veggies:

Ex. Avocado

Ex. Protein balls – VEGAN/VEGETARIAN

Ex. Soup (Cup a Soups)

Meat/Protein:

Go for 1-2 meats in bulk (frozen) that you like

If vegetarian or vegan, a source of protein that you like (usually cheaper so you can maybe get 3-4 options like beans, tofu or “fake” meats)

Ex. Chicken

Ex. Beef

Ex. Pork

Ex. Fish

Ex. Tofu

Dairy:

Go for 2-3 options that you can add to meals

If vegan, look for dairy free options such as almond milk.

Ex. Yogurt

Ex. Milk (Almond Milk for vegans)

Ex. Cheese

Carbs:

Go for 2-3 options which you can eat as the base of your meal or mixed in with other good stuff!

If gluten free, look for pastas and breads without gluten.

**All vegan/vegetarian**

Ex. Tortillas

Ex. Instant Brown Rice (1 minute cups, 5 minute rice boxes)

Ex. Quinoa (more expensive)

Ex. Bread (White, Flax Seed, Quinoa Bread – whatever you like)

Ex. Whole wheat pastas

Ex. Tortilla chips

Extra:

Things that make meals taste better or are multi-purpose

Ex. Lemons/limes (good for salad dressings, sauces & to add to your water)

Ex. Spices (recommend 2 spices you like + salt and pepper – chili, garlic)

A Summer Place

Welcome back outdoor lovers…

I hope everyone is enjoying the beautiful weather we have been having, and hopefully taking advantage of being outside!

For today’s blog post, I will be listing a few areas within the Niagara Region that are perfect for various recreational activities such as: Hiking, Biking, Canoeing, Having a picnic or gardening.

Some places that I really enjoy and highly recommend include:

1. Centennial Gardens – (321 Oakdale Avenue, St. Catharine’s, Ontario)

If you’re looking for a place to go on a walk, ride your bike or have a picnic and simply enjoy nature. Then this is the place for you!

Centennial Garden’s is a beautiful park located just downtown St. Catharine’s. It was constructed in 1967 to honour the 100th anniversary of Canada. This garden is more commonly known for its hiking and biking trails that lead through a few of the original  Welland Canals which continue along the Canal Valley.

This park has an 18-hole disc golf course which is perfect for playing Frisbee with friends or just simply hanging out with family or a significant other. Overall, the park has 9.3 hectares of land that provide endless opportunities for those who visit.

I highly recommend calling a few friends, packing a nice lunch and enjoying a few leisurely activities this upcoming weekend at Centennial Gardens.

For more historical information and direct route maps on this location visit: www.stcatharines.ca/en/experiencein/centennial-gardens-exhibits.asp

2. Montebello Park – (64 Ontario Street, St. Catharine’s, Ontario).

Montebello park similar to Centennial Garden’s is also located downtown St. Catharine’s. This park is PERFECT for upcoming summer nights!

Montebello park hosts various activities and events each year such as concerts, celebrations, moonlight movie nights and beautiful rose gardens.

For upcoming events and concert scheduling follow this link: www.stcatharines.ca/en/playin/Park-Experiences.asp

To make things even better… If you’re looking for new ways to spend your summer nights and save money, every  Sunday and Tuesday starting in June from 7:00pm-9:00pm, Montebello Park is hosting free concerts for those in the community. So grab some friends, take a night off and enjoy a fun summer night of free music and great company!

Well that’s all for now. Remember to keep checking in every Wednesday for more posts on how you can save this summer all while enjoying the outdoors. Until next time!

Picture Perfect

Hi saavy savers! I am back again this week to talk to you about our second DIY project!

Do you have some old pictures lying around that you’ve been meaning to hang on the wall or put in an album? Are you interested in decorating your room with something unique and meaningful? I may have the perfect solution for you, so let’s get started:

Today we are going to be making a picture wall!

Materials that you will need:

1. Pictures!!

*No picture wall is complete without some pictures. Choose meaningful pictures that you would like to see everyday! The perfect pictures are those that make you feel special, reflective, happy, positive, energized, and ready to take on the world 🙂

2. Clothespins

*If you do not have clothespins in your laundry basket, you can find some in the bath aisle at the Dollar store. I found a package of 40 pink and blue clothespins for $1.00. What a steal!

3. String/Yarn/Ribbon

*This will be our base for hanging the pictures on the wall. You can use some leftover string, yarn, ribbon, cord, or twine that you find around the house. Or you can find these items at the dollar store!

4. Nails/cork board pins

*You might be able to find these in the garage or in a toolbox; however, these can also be purchased from the dollar store!

5. Paper and pencil

Procedure:

It is time to put all of our materials together to create a unique picture wall that is all our own.

1. The first step is to plan out your wall design. If you are old fashioned like me, you might want to sketch out a little design on a piece of paper; but it would also be super cool to make your design using a computer. It is your choice 🙂

2. Figure out the number of nails you will need to support your picture wall, and where these nails should be positioned in your design. In the simplest design, you may need only two nails if you just want a straight line of pictures. However, if your design is more complex, then you may need more nails to support it.

3. Wrap your cord around each nail to secure it in place, and carry out your design. I like to create my cord using different colours of yarn that I braid together to make my cord secure and unique!

4. This our final step, and it is the most exciting part of the project. It is now time to hang our pictures by using clothespins to hang them on our cord!

Now it is time to take a step back to look at your finished piece. I hope that this picture wall will make you feel happy and sentimental every time you see it! 🙂

Cost Analysis:

$3-25

Depending on the materials you need to buy, this project can cost anywhere from $3 to $25. The biggest item you can save on is your pictures. If you find pictures lying around the house that you would like to use, this will save you a lot of money. However, you might have some pictures stored on your camera, iPad, iPhone, etc. that you can print at your local Walmart or Shoppers Drug Mart. Walmart tends to be the cheaper option with each 4×6 photo costing 10 cents.

Store bought wall-décor and frames can cost anywhere from $10.00-$50.00, and these decorations usually require more effort to hang up and are not nearly as cute and unique. With this picture wall, you have put your own spin on your wall, and you have made it meaningful to you! If you ever get bored looking at your wall, you can always swap new pictures for your old one, or continue to add onto your wall to keep it fresh!

Total savings: $7-$43

Time: 15-20 minutes

Effort Required: 2/4

Breakfast Muffins!

WELCOME TO MAD FOODIE

Hi savvy savers! My name is Brynn and I am a summer student at the Student Awards and Financial Aid office. Every Thursday I will be posting all things food :). From recipes to grocery tips, I’ve got it all!

Today we’re going to start off with easy breakfast muffins! These can be made at night, or on the weekend in big batches, and then frozen until you need them!

The original recipe is from Buzzfeed which has a step-by-step guide & videos !

Here’s how I’ve switched the recipe around for my own preferences 🙂

– I always put more cheese than they recommend (I love it!!)
– I sometimes will use feta cheese instead of cheddar cheese to put on top for a two cheese option!
– I don’t always use 7 eggs; I will make some of the muffins without the egg inside the middle to switch it up a bit
– I also usually make a double batch of these and freeze half of them for the next week or when I’m super hungry 🙂

If you’re vegetarian, you can always swap out the meat in the middle and put some veggies in there! I’ve done this with spinach and mushrooms before! Mmm!!

These muffins are the best for on-the-go mornings and can really be switched up with whatever you like!

See you next Thursday!
