CONTINUING EDUCATION
Wine Appreciation I
A special interest course focussed on the tasting of wines from Canada and around the world. Learn and improve your skills of wine tasting. Be able to distinguish (by appearance and taste) major varietal wines (Chardonnay, Riesling, Merlot, Pinot Noir, Cabernet, etc.) Explore the factors that affect a wine's quality. (12 weeks in duration)
Registration Fee: $300.00

Wine Appreciation II
A special interest course designed to deepen and refine your winetasting skills as well as explore some of the world's most fascinating wines.
- Explore new wines being crafted in old regions such as Italy's Sagrantino di Montalfalco & Spain's Priato
- Be treated to new world wines made in old world styles such as Old Vines Zinfandel and Washington state Syrah. And old world wines made in new world styles such as fruit-forward wines from Corbierres, Languedoc and the Loire.
- Become better acquainted with your own thresholds of wine's basic components and better skilled at varietal recognition.
Prerequisite: Wine Appreciation I or permission of the Instructor
Registration Fee: $325.00
Time: 7:00-10:00 p.m. Wednesday Evenings starting January 3, 2005 (12 week course)

CERTIFICATION COURSES
Certification Program in Wine Sales and Service
A special interest course designed to prepare you for retail service in the wine industry. Please note that this course includes the CCOVI Wine Sales and Service Certificate upon successful completion.
- Gain insight into the wine consumer: who buys, how, where and why
- Practice the dimensions
of quality service
- Learn how to ‘sell’
wine through a facilitation process rather than a ‘hard’
sell
- Learn how to give
professional presentations, work with others and resolve difficult
interactions
Registration Fee: $175.00
Time: 7:00-10:00 p.m. Monday Evenings, March 14 to May 9,
2005 (9 week course)
Prerequisite: Intro to Wines of Ontario or permission of Instructor.

Introduction to the Wines of Ontario
A special interest course focused on the wines of Ontario: how they are grown and made.
Please note that this course includes the Wine
Council of Ontario Certification.
- Learn about the factors
that affect taste and quality of wine
- Become familiar with
VQA wines of all styles and the Viticultural Areas in which they
are grown
- Learn how to serve
Ontario wine, pair with food and conduct a wine tasting
Registration Fee: $250.00
