May 23-25, 2002. Bacchus to the Future. Inaugural Brock University Wine Conference. Brock University, St Catharines, Ontario, Canada.
 
This conference was an initiative by the Cool Climate Oenology and Viticulture Institute (CCOVI) and the Faculty of Business. More than 200 participants gathered in St Catharines for this unique conference to learn more about research in the fields of wine science & technology, sensory evaluation, wine business, wine history and culture, and to enjoy the very popular educational wine tastings.

The incredible success of this event led to the creation of the Bacchus conference series in partnership with the Business School of Burgundy (Dijon, France).

This conference was co-organized by the Business School of Burgundy (ESC Dijon) and CCOVI (Brock University), with the valuable support of the University of Dijon.
 
The central theme chosen for the European edition of "Bacchus" was the notion of “terroir”. All the wine growing regions in France and throughout the world are giving thought to the identification of their "terroirs". Seventy years after the creation of the “appellations d'origine” in France, a region like Burgundy which has 101 “appellations” was a most appropriate locale for a conference with this focus
